Turkish Green Beans

- ½ cup extra virgin olive oil
- 1 big onion, finely chopped
- 1 lb. fresh stringless green beans, tips removed
- 3 large fresh tomatoes, diced
- 2 cloves of garlic, sliced or chopped
- 1 teaspoon coconut sugar
- 4 cups water
- Salt
- Pepper
- Heat the olive oil in a pan and cook the chopped onion until lightly browned.
- Add green beans. Stir them until they slightly change color. About 8-10 minutes.
- Add the tomatoes, the sugar and the garlic. Cook for 10 minutes.
- Add the water and season with salt and pepper.
- Cook on low until the beans are soft. Add more water as needed.
- Check on the dish every 10 minutes and stir periodically. Cook about 35-45 minutes.
- Serve.
