Recipe type: Dessert
Cuisine: American
Serves: 8 servings
Ingredients
  • For the Filling
  • 3 large peaches washed and peeled (save the peelings) cut into ½-inch wedges. (I prefer Palisade Peaches!)
  • ½ cup granulated sugar
  • 2 teaspoons lemon juice
  • ½ teaspoon coarse salt
  • 3 teaspoons cornstarch
  • 1 teaspoon amaretto or bourbon (optional)
  • For the Topping
  • 6 tablespoons unsalted butter, room temperature
  • ¼ cup light-brown sugar
  • 1 cup all-purpose or gluten-free flour
  • ½ teaspoon coarse salt
  • ½ cup finely chopped pecans
Instructions
  1. Preheat oven to 375 degrees. Make the filling: Combine peaches, granulated sugar, lemon juice, cornstarch, and salt (amaretto /bourbon - optional). Transfer to an 8-inch square baking dish.
  2. Make the topping: In a large bowl, using an electric mixer, beat the butter and brown sugar on medium until light and fluffy. Add flour and salt and finely chopped pecans, with your hands, mix until large pieces form. Scatter evenly over the filling.
  3. Bake until the center is bubbling, 40 to 50 minutes, tenting loosely with foil after 30 minutes if topping is getting to brown. Let cool 20 minutes before serving.
Notes
Adding a teaspoon of amaretto or bourbon changes up the flavor, but makes it delicious too!
