Nothing better than the aroma of that incredible sweet smell of peaches, cinnamon, and brown sugar coming from the oven…
A comfort food dessert straight from the oven with crispy crumble on top. Oh man, nothing says end of summer than fresh ripe Palaside Peaches from Colorado. From the farmers market to my table and into many desserts to celebrate the harvest! I am sure your market has delicious peaches as well… grab them up for the summer is over!
About that summer being over thing. Well, today it is snowing, an odd September weather event, and yesterday it topped out at 100 degrees. Crazy stuff here in Denver. But… it is supposed to be back up in the ’80s by the weekend… so I will be running to the farmers market to get plenty of peaches to make up a few batches of, and can, a lot of delicious peach filling for the winter’s cobbler and crumble!
There are, of course so many variations of peach crumble and peach cobbler out there for you to try, but what makes this recipe a little different is the delicious chopped pecans added to the mix and, optional, but purely delicious, a touch of amaretto or your favorite bourbon mixed in with the peaches!
Now for those of you that are not the best peach peelers, here are a few tips!
And remember to keep the peelings! I’ll share with you why in a minute!
Using a type of swiss peeler is easy if the peach is firm and by far the easiest and quickest way to peel a peach, but if not firm enough, you can use the next method.

Author: Teri Vaughn
Absolutely Incredible! You can serve warm with your favorite vanilla Ice Cream - even better! For an even sweeter summer, take advantage of the season's ripe peaches from your local farmer market!
Ingredients
- For the Filling
- 3 large peaches washed and peeled (save the peelings) cut into ½-inch wedges. (I prefer Palisade Peaches!)
- ½ cup granulated sugar
- 2 teaspoons lemon juice
- ½ teaspoon coarse salt
- 3 teaspoons cornstarch
- 1 teaspoon amaretto or bourbon (optional)
- For the Topping
- 6 tablespoons unsalted butter, room temperature
- ¼ cup light-brown sugar
- 1 cup all-purpose or gluten-free flour
- ½ teaspoon coarse salt
- ½ cup finely chopped pecans
Instructions
- Preheat oven to 375 degrees. Make the filling: Combine peaches, granulated sugar, lemon juice, cornstarch, and salt (amaretto /bourbon - optional). Transfer to an 8-inch square baking dish.
- Make the topping: In a large bowl, using an electric mixer, beat the butter and brown sugar on medium until light and fluffy. Add flour and salt and finely chopped pecans, with your hands, mix until large pieces form. Scatter evenly over the filling.
- Bake until the center is bubbling, 40 to 50 minutes, tenting loosely with foil after 30 minutes if topping is getting to brown. Let cool 20 minutes before serving.
Notes
Adding a teaspoon of amaretto or bourbon changes up the flavor, but makes it delicious too!
