A Brown Rice and Cauliflower Hash Stuffed Avocado. Simply Delicious. No kidding.
A delicious dish full of goodness. Wholesome goodness. And a wonderful lunch!
It will surprise you how quick and easy this is to make – to be on the table in minutes! AND If you are a fan of avocados, you will be very happy with this dish.
The end of summertime.
Summertime is a very busy time for all of us, but this one had been quite the summer for me. I lost my mother on the 29th of May. She suffered from dementia for several years. It was years of pain – losing her a little bit over time. I know many who have dealt with this disease, and it is not easy for any of us. I cried many tears, and held her hand and rubbed her head for hours, and I reached her through song – which she always recognized the moment I would start singing. We were very close until the very end.
That being said – cooking in my kitchen slowed down for a while. I started cooking simple but delicious dishes again, as I was then in the packing, cleaning and staging a house to sell mode. I am sure some of you can relate.
This was one of those dishes.
The new best-kept secret for healthy eats is in the produce aisle. Cauliflower hash. Wonderful tiny bits of cauliflower, broccoli, carrots, and onions. All fresh and ready for many recipes! Like this one!
Along with the hash, add some roasted red peppers, pre-cooked brown rice, spices, cilantro, and chopped avocado. Simple.
This has been my go to lunch for several days over the last month I will not lie – and it is everything I need to keep me going throughout the day. It is easy and quick but it is also so good! Other go-to meals? One of my all-time favorite sandwiches… peanut butter, honey and shredded carrots on crunchy, seeded, whole grain bread. Simple. That has become my life in the kitchen.
When you make up our next grocery list, maybe add that cauliflower hash to it, and some brown rice. I think you would be glad you did.
And in closing – I am healing. I have the love of many family and friends that have surrounded me during this time. It is bittersweet when you lose a loved one. I miss her – but so glad she is free to be whole, happy and healthy again.

- 1 tbsp canola oil
- 1 tbsp ghee/butter
- ¼ cup cauliflower, chopped fine or pre-packaged cauliflower hash
- ¼ cup broccoli, chopped fine
- ¼ cup carrots, chopped fine
- ¼ cup onion, chopped fine
- ¼ cup roasted red peppers, chopped fine
- ½ tsp garlic powder
- ½ tsp salt
- ½ tsp black pepper
- ½ cup brown rice
- 2 avocados, halved, seed removed, scoop out the fleshy part and dice into small pieces (set aside skins to stuff).
- cilantro for garnish
- Add canola/ghee or butter to a medium pan over medium heat.
- Add all the vegetables and spices.
- Cook until tender, about 5 minutes.
- Add brown rice and cook another 2 minutes.
- Add rice to vegetables and add avocado pieces and toss gently.
- Stuff the avocado skins with mixture and add cilantro. Serve. Enjoy!
