Wake up! Wake up! I have a delicious breakfast taco to share! Carnitas and Egg Breakfast Tacos! Crispily fried pork carnitas, fresh eggs, green chiles, a bit of white cheddar cheese and a sprig or two of cilantro!
Sometimes… bacon will just not do. I rarely say this, really, hardly ever. BUT… sometimes I want carnitas with my eggs. This is such a delicious way to have your breakfast. Such an easy way to have your breakfast. Just put some trust in me on this one.
It is just a beautiful morning to switch up my breakfast from the usual suspects. I woke up early to all the birds chirping – there is still a little nip in the air early in the morning here in Denver, so I have time to cook something up before I head out to the patio for coffee and nature-worshipping!
SO – just wondering – do you ever make carnitas?
*Carnitas – “little meats” Mexican cuisine, simmered with spices until juicy and tender. The pork is shredded and then fried in ghee/lard until crispy. Totally delicious. Totally!
What do you put in the crockpot with your pork to make carnitas?
Next… just cook up your favorite style eggs – I like scrambled – add green chilies, cilantro, and white cheddar cheese. Then, quickly soften your corn tortillas in cooking oil and stuff them with the pork and other delicious fillings. Make up several of these for the breakfast table! Set out your favorite salsa and Yum. Yum. Breakfast is ready!

- 1 pork roast
- 2 cups chicken stock
- ½ tsp Salt and pepper
- ½ tsp dried oregano
- 2 tbsp ground cumin
- 1 tsp coriander
- 2 tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- ½ jalapeno, seeded and chopped
- ¼ cup ghee/oil and cooking oil
- 6 organic corn taco sliders
- 6 fresh farm eggs
- ¼ cup cilantro, chopped
- 1 cup white cheddar cheese, shredded
- salsa for condiment
- Add the pork, chicken stock, the salt and pepper, dried oregano, ground cumin, coriander, olive oil, onion, garlic, and jalapeno to crockpot/slow cooker and cook on high for 4-5 hours (depending on your slow cooker) or until pork is cooked through.
- Shred 3 cups of the pork. Put the rest off pork in container/s and store in the fridge.
- In a medium pan over medium heat add the ghee/cooking oil and then pork. Cook until golden and crispy.Set aside.
- In a medium pan over medium heat, add oil and then tortillas one at a time. Cook tortillas for 1 minute and flip over and cook one minute more (tortillas should be soft). Drain on paper towels.
- Add ½ cup of the crispy pork to each corn tortilla.
- Cook eggs to your liking, and add 1 egg to each tortilla over pork.
- Add cheese to the top of eggs and top with cilantro.
- Top with salsa (optional) and serve.
