It is time for a quick, healthy, wholesome stir fry with chicken or as a vegetarian meal… in minutes!
A little spicy, a little sweet, a little crunchy and a whole lot fabulous!
Busy. Busy. Busy. I have been cleaning out sheds, a garage, an office and still have much more to do! I might be moving, or I might be moving more items into the house I occupy now. Either way – I have been busy… and will be for quite a while.
So, the busier I am … the easier the dish! Lucky for all of you too… that have busy lives.
This dish is even easier if you choose a package of cauliflower hash! I purchase mine when I am in a hurry to cook up a good meal in minutes at my local King Soopers/Kroger.
Get your chopsticks out! Or not… if you want to use the almighty fork. Whatever utensil you choose – get it out and get ready for this awesome stir fry. The star of this dish is, of course, the cauliflower hash. A great combination of cauliflower, broccoli, carrots, and onion.
Add the red peppers, brown rice, chicken (or omit if vegetarian), pine nuts, water chestnuts, and sweet chili sauce… Dinners ready!
The taste is fresh and clean – sweet and spicy – wholesome and healthy!
To make this dish even easier (and if time is the issue, quicker) use rotisserie chicken breast. It is easy to shred or to chop up. The roasted red peppers are from a jar, and the pine nuts roast up in just a minute or two. This is another awesome dish that is great cooked up for other meals – lunches or leftovers in the coming days.
I must say! This combination is also so good in a lettuce wrap. I have saved some back for another fabulous dish. Brown Rice & Veggie Hash Stuffed Avocado. I will be posting this recipe soon! Maybe this combo would also be tasty in a soup with added broth and spices, or adding some cannellini beans or garbanzo beans – what do you think?

- 2 tbsp canola oil
- 1 cup pre-packaged cauliflower hash OR
- ¼ cup cauliflower, chopped fine
- ¼ cup broccoli, chopped fine
- ¼ cup carrots, chopped fine
- ¼ cup onion, chopped fine
- ¼ cup roasted red peppers, chopped fine
- 1-8 oz. can water chestnuts
- 1 cup brown rice, cooked according to package
- ½ tsp garlic powder
- ½ tsp salt
- ½ tsp black pepper
- 1 tbsp canola oil
- 2 tbsp cilantro, chopped
- 2 cup shredded rotisserie chicken breast
- ¼ cup pine nuts, toasted in 1 tsp butter or ghee
- ¼ cup sweet chili sauce
- Heat the oil in a medium pan over medium heat.
- Add cauliflower hash, or the cauliflower, broccoli, carrots, and onion, and cook until tender, about 4 minutes.
- Add the roasted red peppers, water chestnuts, and brown rice and heat through.
- In a small saucepan over medium heat, add t tsp of butter/ghee and toast pine nuts for 1 minute or so. Watch the whole time- they do turn brown quickly!
- Add rotisserie chicken, pine nuts, and sweet chili sauce to the medium pan with the hash and rice. Mix well. Serve in bowls or wrap in lettuce.
