The weather is changing, and it is time for green chiles. The Hatch Green Chile Stands are popping up all over! I love roasted green chiles and… I really love the smell of roasting chilies. It means fall is near, and that It is time to get the fresh chilies roasted, cleaned, and ready so that I can start cooking some incredibly tasty dishes! And also it means it is time to put some up for the coming winter months (I freeze them in freezer bags). There are so many good things to eat when green chiles are in abundance!
But hey… do not worry If you do not have chile stands in your neck of the woods. Most stores do carry green chiles… in cans or frozen and some do carry Hatch green chiles. If they do not, and you want some, you can order them online from The Hatch Chile Store. Worth it!
Chicken Tortilla Soup With Roasted Green Chiles and Crunchy Tortilla Strips & Cotija Cheese
Yesterday I spent hours wading through my recipes to see which green chile dishes to share. I have a lot! They can take everything to a new level. Even mac-n-cheese, egg dishes, quick pizza dishes, and rice dishes. But this is the 1st dish for roasted green chile month!
A delicious soup full of free-range organic chicken, fresh chopped roasted green chiles, tomatoes & green chiles, corn, organic chicken broth, jalapeno, cilantro, onions, and spices.
A crockpot can be your friend for cooking up some chicken breasts so that when you get home from a busy day, you can throw all the other ingredients together for this tasty soup!
And of course, every good chicken tortilla soup needs a little crunch. It takes only minutes to add texture to your soup by frying up these “matchsticks” of thinly sliced corn tortillas. I like the mini corn tortillas but any corn tortillas will do. While still warm the matchsticks are sprinkled with sea salt and cotija cheese crumbles. Just a bit more YUM!
You can also add a dollop of sour cream or sliced avocado to this soup – which I do often.

- 2 pre-cooked organic farm fresh boneless chicken breasts (cook in 6 cups water seasoned with salt and pepper for about 15 minutes or until chicken is done.)
- 3 tbsp olive oil
- 1 small onion, chopped
- 4 garlic cloves, minced
- 1 jalapeno, chopped fine
- 4 cups roasted green chiles, chopped or 1 large can fire roasted green chiles
- 1 can Ro-tel® tomatoes and green chiles
- 1 tsp sea salt
- 1 tsp fresh ground pepper
- 1 tsp garlic powder
- 8 cups organic chicken broth
- 1 juice of 1 lime
- 1 tsp cumin
- ½ tsp Mexica oregano
- ½ tsp dried thyme
- ½ tsp marjoram
- 2 cups fresh or frozen corn
- Garnish
- 4 small corn tortillas (I use Mi Rancho mini tortillas) cut into match-sticks, fried
- 2 tbsp. sunflower oil
- sea salt to taste
- 2 tbsp cotija cheese
- cilantro, chopped
- 1 tbsp sour cream or Mexican crema
- Avocado slices
- Heat 1 tablespoon of olive oil in medium saucepan over medium heat.
- Add the onion and jalapeños.
- Cook about 10 minutes or until onions are golden. Add garlic and cook for 1 minute more. Add to soup pot.
- Add chicken, green chiles, ro-tel®, salt, pepper, garlic powder, chicken broth, lime juice, cumin, oregano, thyme, and marjoram and corn.
- Stir and bring to boil and then simmer, covered for 25-30 minutes.
- Again using the medium size saucepan, add 2 tbsp sunflower oil and then add sliced tortillas, adding a little more oil if needed. Saute for 2-3 minutes. Remove to paper towel and season with sea salt and 1 tbsp crumbled cotija cheese.
- Ladle soup into bowls and top with fried tortilla strips. Garnish with cilantro, or sour cream, cotija cheese or avocado.
