How about Colorado Style Biscuits and Gravy with Green Chili & Spicy Sausage!

Oh yes. It’s a killer wholesome dish. And if you are looking for some awesome gravy – look no more!
Colorado has always been a green chile state – well as far back as I can remember. My favorite lunch was a simple Mexican pizza – Rotel®(tomatoes and green chiles) on a flour tortilla with “lottsa” cheese – baked until crisp!
Then there was my dad’s green chile, burritos covered in green chile, green chile cheese fries. Of course, there are always those incredible Home-Made Chile Rellenos With Colorado Green Chile or the Chicken Tortilla Soup With Roasted Green Chilies. The list kept growing and I have shared many of these recipes with you! Everything was based on green chiles. My favorite green chilies? Hatch®.
So why would there not be Colorado Biscuits and Gravy with Green Chili & Spicy Sausage? Has to be!
Oh… you can find it on the menu in some restaurants here in Colorado – like the wonderful Antlers Hotel in Colorado Springs. BUT – I needed mine to be gluten-free. Easy enough. I just switched out the flour when making my gravy – and I made up gluten-free biscuits!
I must say I had been making and eating biscuits for several years … special mornings… special days.
But this breakfast is so comforting to me.
Since I like my gravy a little spicy, I used hot sausage in this recipe with some smoked paprika. The green chiles I used were mild, and the combination was delicious.
What do you need to make this fabulous dish?
- bulk sausage
- flour
- milk
- green chiles
- smoked paprika
- salt and pepper
- sautéed onions (optional)
Want it vegetarian? Substitute the sausage with MorningStar Farms® Maple Flavored Sausage Patties – crumbled. I have! They are delicious. I add a bit of ghee/butter to the pan for the “grease” to make the gravy.
However you choose to make them… they will be delicious!

- 6-8 flaky biscuits (gluten-free for gluten-free) - (I use immaculate organic flaky biscuits)
- 8 oz. of your favorite hot sausage
- ¼ cup flour (gluten-free for gluten-free)
- 1 cup milk
- 1-4 oz. can Hatch® green chiles - drained
- ½ tsp. smoked paprika
- salt and pepper to taste
- Cook biscuits according to package.
- Cook sausage until no longer pink.
- Add flour directly to the pan of cooked sausage, do not drain the grease. Stir to combine.
- Add milk and stir until bubbly. If too thick, add milk to make the gravy the consistency of your liking.
- Add green chiles.
- Add paprika and salt and pepper. Stir.
- Plate biscuits - 2 per plate and slice biscuits in half.
- Add gravy on top and serve warm. Enjoy!
