Wrap your head around this – A Spicy, Cheesy, Corn and Green Chili Casserole with Edamame. A really delicious side dish with a touch of spice! Perfect!
I am going to dinner at the home of my dear friend Pats tonight.
I am taking a side dish.
A little intimidating since she studied at Le Cordon Bleu in Paris. She is an unbelievable cook!
I kept thinking throughout the day about what I had on hand and what I wanted to make for this dinner. Yes. I had all of the things that go into the dish… but now I just had to make it awesome! Will she like it? Will it stand up to the dinner she has planned? After tasting it – I thought it would do just fine.
I have made corn casseroles before, but I wanted something with more substance, a little bite, and a little crunch.
The recipe is easy – the hardest part is shelling the edamame!
What is in this Corn and Green Chili Casserole with Edamame?
- fresh corn
- edamame
- cream cheese
- chopped green chilies
- sweet onion
- garlic
- smoked paprika
- dried jalapenos (I get most of my spices from the Savory Spice Shop)
- coconut sugar
- manchego cheese
A very easy “mix it up and toss it in the oven side-dish”. That is the kind I like! How about you?
I am looking forward to the dinner. I am really looking forward to spending time with my dear friend. There is just nothing better, I think then a wonderful conversation over a fabulous dinner, with a glass of wine and some great music, right?
I also think all the flavors are here in this dish and it will soon become one of my favorite sides!

- 2 ears fresh corn
- ½ cup shelled edamame
- ½ sweet onion, chopped
- 2 cloves garlic, minced
- salt and pepper to taste
- 2 tsp smoked paprika
- 1 tsp dried jalapenos
- 1 tsp coconut sugar
- manchego cheese, shredded
- paprika for garnish
- Butter an au gratin dish and preheat oven to 325 degrees.
- In a large bowl mix all of the ingredients except the manchego cheese.
- Add to au gratin dish and sprinkle the manchego cheese on the top.
- Sprinkle with a little bit of the smoked paprika.
- Bake for 45 minutes or until golden brown.
