Hello, Easy! Hello, Delicious!
Yes! Pre-made taquitos in your freezer aisle. And I love that there are vegan, vegetarian versions of taquitos. The easiest wholesome, healthy enchiladas I have ever baked up. Ever. By purchasing some easy to bake snacks, and having a can of Hatch® green chile enchilada sauce (I love HATCH everything) on hand, I had lunch in just a few minutes! Okay – yes. It was too easy.
The longest part of the process? Baking them up. There is some waiting going on here. Waiting on the enchiladas to heat through and the cheese to melt and turn a golden brown. But such things are never wasted on me. Nope. Just sitting and relaxing while these easy taquitos enchiladas were in the oven was wonderful – I got cozy on my couch under a warm throw and caught up on a chapter.
The really wonderful thing about these awesome enchiladas? Your choice of vegan, vegetarian, chicken, pork or beef – whatever your preference. Taquitos come stuffed with all sorts of fabulous protein!
Just so you know, in this dish, I used Starlite Vegan Chicken Style Taquitos. I picked up a box at Sprouts over the weekend for snacking on a snow day (always a good Netflix/Hulu day). Luckily, I did not eat them all!
Then, the day after, the weather changed dramatically, as it does so often in the Spring here in Denver. I shifted to cooking and spending time on potting my herbs and flowers. It seems like once I start either one of those things time flies. I forget to eat. I just… keep… going. I needed something simple, pretty darn quick and delicious for dinner.
SO – here was my answer. Easy Taquito Enchiladas
I was pleasantly surprised at how good they were.
AND – just to be fair – when you have more time on your hands and want a traditional red sauce, try making my Beef Enchiladas with Green Chiles & Sweet Corn Picadillo (with or without beef). You will see why I make these on a regular basis. A favorite.
Just throw a dollop of sour cream or crema, black olives, or cilantro on top to make them even more delicious!

- 4 - Starlite Vegan Chicken Style Taquitos
- 1 - 15 oz. can Hatch Medium Green Chile Enchilada Sauce
- 1 cup Mexican blend cheese (vegan cheese for vegan)
- Sour cream/crema, black olives, tomatoes, or cilantro for garnish optional
- Pre-heat oven to 350 degrees.
- Add ½ of the green chile sauce to a medium baking dish and add taquitos.
- Top with the other ½ of sauce and add cheese.
- Bake for 20 - 25 minutes or until cheese is bubbly and golden.
- Place 2 on each dish.
- Garnish with sour cream/crema, black olives, tomatoes, or cilantro.
- Serve.
