Don’t you just love easy chicken dishes? Yes? Then you will love this easy crock pot Mediterranean Chicken with Rice Pilaf meal.
Especially when you can use your programmable slow cooker after you get home from your day, relax for an hour, and it is ready to serve! Whoa! Can that be true? Oh, yes it can.
Living in Turkey for a few years made me appreciate both rice pilaf and olives – the best olives. From local olive orchards. Can you imagine?
Although I use Near East Rice Pilaf in this dish, this pilaf reminds me of ALL the dishes I had while living in Turkey that included rice pilaf. And that was many. Where we eat potatoes in America as a side dish – they eat rice pilaf.
There must be at least a million ways to cook up chicken. This one I really like. The flavors are bold with the paprika and green olives with pimento and delicious with some cream cheese melted into the pilaf mixture. Mmm.
What is in this Mediterranean Chicken with Rice Pilaf?
- free range chicken breasts
- rice pilaf mix
- organic free range chicken broth
- ghee/butter
- sautéed onions
- 1/2 tsp oregano
- 1/2 tsp smoked paprika
- 1/4 th block of cream cheese
- 1/2 cup green or black olives
- salt and pepper to taste
- parsley as garnish
This dish is wholesome and tasty and only needs a side salad or some incredible Turkish Green Beans!

- 2 free range chicken breasts
- 1 Tbsp olive oil
- 1 box Near East Rice Pilaf Mix - original
- 1 - 32 oz carton organic free range chicken broth
- ¼th block of cream cheese, at room temperature
- ½ cup green or black olives, sliced
- 1 tsp ghee/butter
- ½ sweet onion, chopped
- 2 cloves garlic, minced
- ½ tsp oregano
- ½ tsp smoked paprika
- salt and pepper to taste
- parsley as garnish
- Butterfly chicken so that you have 4 breasts.
- Rinse and salt and pepper the chicken.
- Saute chicken in slow cooker in olive oil until brown on both sides - about 4 minutes on each side.
- Change setting to slow cooking and add chicken broth, the rice pilaf and seasoning packet,sliced olives and the softened cream cheese in spoonfuls over the top.
- In a medium saucepan heat ghee/butter until melted. Add onions and cook until golden brown.
- Add garlic and cook 1 minute more. Add oregano and paprika to garlic and add to the slow cooker.
- Cook for 30 minutes or until the rice pilaf is tender, but not too soft.
- Remove chicken, and plate rice pilaf, add chicken on top and garnish with parsley.
