It does not really matter. If this veggie patty is included – it just does not matter. It WILL be delicious.

I look out my window and see the blossoms on my cherry tree opening and the tulips, hyacinths, and daffodils are enjoying the sunshine. That means the farmers market is going to open soon! Oh, I cannot wait. We are lucky to have some great organic farms here in Colorado. I can almost taste those divine juicy beefsteak tomatoes.
But today – until then – grape tomatoes in a salad is on the menu. AND… this organic salad has a nice whole earth veggie patty to make it sooo good.
The flavors are so amazing. I made up extra patties and have them several ways… for several days. Makes my life easy for a while anyway. I have to serve these on Earth day (April 22) because they are so earthy! All good things I like to eat! This is also a fabulous whole earth veggie burger! It’s also gluten-free!
What is in the veggie patty?
- garbanzo beans
- quinoa and brown rice
- walnuts
- shallots
- cilantro
- rice flour
- fresh corn
- eggs
- jalapeno
- roasted red peppers
- spices: smoked paprika, all-purpose seasoning, s&p
- fresh garlic
- miso
- ghee/olive oil
- sunflower seeds
Yes! A very scrumptious burger with a toasted brioche bun, some lettuce, vegan mayo, crispy onion straws and guacamole… we are talking about so hard to resist!

- 1 - 15 oz. can garbanzo beans, drained, mashed
- 1 - 8.5 oz pkg. Seeds of Change Quinoa and Brown Rice
- ½ cup walnuts, coarsely chopped
- ¼ cup shallots, sliced
- 2 tbsp cilantro, finely chopped
- 4 tbsp. rice flour
- 1 cup fresh corn
- 2 eggs
- 1 cup roasted red peppers, chopped
- 3 cloves fresh garlic, minced
- 1 tbsp miso - (so good miso mayo spicy red pepper)
- ¼ cup sunflower seeds
- spices: 1 tsp each: smoked paprika, all-purpose seasoning, salt and pepper
- For cooking
- 2 tbsp ghee
- 1 tbsp olive oil
- In a large bowl, stir all the ingredients together except ghee and olive oil for cooking.
- Form the veggie mixture into 8 patties. (If the patties are too sticky - add just a bit of rice flour - a little at a time. Do not get the patties too dry.)
- Heat a cast iron skillet over medium heat and add the ghee and the olive oil.
- Add the patties and cook until crisp and golden, about 4 minutes per side.
- Serve with a salad or as a veggie burger.
