It’s Spring… time to lighten up!
Delicious snap pea and wild rice veggie bowl…
Hungry, hungry. What to eat when I am hungry but do not want a snack? It’s a Snap – Veggie Rice Bowl.
Yes, a snap to pull together for lunch or dinner. You know that time when you are hungry… really hungry because you were so busy that you did not stop to eat all day? It is that kind of dish. Because I did this yesterday, and this is my new favorite go-to quick meal!
Snap peas are looking mighty fine in the veggie bins these days at the market. Nice and green and “snappy”. I picked some up not knowing at the time how I would cook them up… but it all came together with some brown and wild rice, some veggies and just a little bit of So Good Miso Mayo (Spicy Red Pepper). It was in the fridge too, and I was hungry – remember? I wanted something ready to go. It worked! Fabulously!
This dish is even easier if you have a pouch or cup of wild rice in the pantry, which I usually do and did on this day – Minute Ready to Serve Brown & Wild Rice.
The flavors in this dish are amazing – the roasted red peppers add a nice smoky, and sweet taste and the snap peas… a wonderful crunch. The shallots and mushrooms are a nice surprise and of course, the wild and brown rice are a tiny bit chewy… which makes it a winner!
If you are out and about running errands and are famished by the time you get home – this dish would help you out. For sure. Tasty, quick, healthy, and full of goodness.
A delicious lunch or dinner in 15 minutes or less.

- 1 tbsp grapeseed oil
- 1 cup snap peas
- 1 cup mushrooms, chopped
- 1 shallot, chopped
- ½ cup roasted red peppers
- 1 tsp garlic powder
- 1 tbsp parsley, chopped
- salt and pepper to taste
- 1 cup brown and wild rice mix, cooked
- 1 tbsp So Good Miso Mayo (Spicy Red Pepper)
- In a medium-size skillet, over medium heat, add grapeseed oil.
- Add snap peas, mushrooms, shallot and cook until tender - about 8 minutes.
- Add roasted red peppers and cook 1 minute more.
- Add the garlic, parsley, salt and pepper, brown and wild rice and mix well.
- Stir in the miso mayo.
- Add to bowls and serve!
